Recipes - Prime Rib
When deciding on the size of prime rib you will need determine how many people you will be serving. You should figure between 3/4-1 lb per person (slightly less if there are kids in the group). If you buy the prime rib from us you may request to have it marinated for your convenience.
- Prime Rib
- Excalibur's Prime Rib Rub (recommended)
- 2 tablespoons garlic, minced
- 2 tablespoons rosemary, coarsely chopped
- 2 tablespoons thyme
- 1 tablespoon black pepper
- Olive Oil
- Potatoes
- Onions
- Carrots
- 2 cups water
- Liquid Smoke
- To prepare the prime rib preheat oven to 325 degrees. We recommend rubbing the roast with Excalibur's Prime Rib Rub.
- After rubbing, place the roast in a roasting pan rib side down.
- In a small bowl mix garlic, rosemary, thyme, and black pepper.
- Add enough olive oil to make a paste.
- Smear paste over the whole roast.
- Place cut up potatoes, onions, carrots and whatever other kind of vegetables you like around the roast.
- Roast approximately 20-22 minutes per pound.
- When time is up check several spots with a thermometer 125 degrees for medium rare, 130-135 for medium to medium well.
- Take the roast out of the oven and let "rest" for 20 minutes to allow the roast finish cooking and the juices to settle.
- Remove the vegetables and let sit covered.
- Pour drippings into a fat separator.
- Discard fat and put drippings back into roasting pan with 2 cups of water and a small amount of liquid smoke.
- Place roasting pan on stove top on medium and scrape the brown bits on bottom of the pan season with salt and pepper to taste.
- Continue to cook until the mixture has reduced by half stirring occasionally.
